Chewy Nutty-Chocolate Pretzel Bars

These are easy, no bake, protein bars made with healthy Brown Rice Syrup or Agave. They are chocolaty and chewy like a brownie with a little salty crunch surprise. These are quite possibly the easiest thing you will ever make. Take 5 minutes and make them, you and your children will thank me! : p

  • 1/4 cup brown rice syrup*  or agave*, (or honey)
  • 1/4 cup natural nut butter (I used peanut this time, but almond is really good too!
  • 5 scoops chocolate protein powder (Optimum Nutrition)
  • 1 cup twist pretzels
  • 1 cup puffed rice cereal
  • almond milk (add by tablespoon until wet enough)

Mix nut butter and brown rice syrup with mixer until combined, about 1 minute.
Add Protein powder and cereal.
Press into a sprayed 8 x 8 pan, sprinkle pretzels on top and press into bars. Let sit an hour before cutting into about 8 bars.
I wrapped them and set in the fridge to grab on my way to the gym and throw in A.J.’s lunchbox.

I mixed the pretzels into this batch, but they got a bit soggy, so adding the pretzels to the top of the bar instead should keep them crunchy.

Toppings/Additions: Drizzle chocolate or chocolate nut butter over top or throw in some chocolate chips for added deliciousness!

*Brown rice syrup and Agave have a lower glycemic index than sugar, honey, and molasses; this means they metabolizes more slowly through your bloodstream. They won’t cause quick sugar-highs and lows which leave you and your kids feeling tired and or cranky an hour after consumed. You can find Brown Rice syrup in the Gluten-Free section of your grocery and Agave by the maple syrup or in the natural foods section. Try them and let me know what you think!
