Refried CowgirlBeans

  • 1 4lb. bag of Pinto Beans
  • Garlic
  • Chipotles in Adobo Sauce
Assorted Spices:
  • Garlic Powder
  • Minced Onion
  • Onion Powder
  • Oregano
  • Salt
  • Cumin
  • Paprika
  • Smoked Paprika
  • Chili Powder
  • Red Pepper Flakes
  • Cayenne

Rinse and pick over the pinto beans (pull out any broken/shriveled pieces/things that don’t look like beans as the bags always say: “may contain small rocks or stones”…I’ve never found any but good to pick over anyway.)

Put in your Crockpot, cover with water about 2 inches.

Use a garlic press to add about 4-5 cloves, and 2 Chipotles in Adobo sauce. (or dice).

Add your spices, I guesstimate about 2 tablespoons of each to start. I measure by the cap-full. : ) Remember you can always add more later!

Cook on low about 8 hours. Use a potato masher or wooden spoons to mix in, and then squish up a bit. Taste and season as needed.

Serve with warm tortillas, cheese and crisp romaine lettuce.

Use in Enchiladas, Quesadillas, Breakfast Burritos with Eggs, Rice, Fry in a skillet with Parmesan to make little patties, on a Big Green Salad with salsa and cheese….. possibilities are endless!
