Roasted Brussels Sprouts with Brazil Nut Parm

We l-o-v-e Brussels. We have even made our friends obsessed. Try preparing them this way (even if you don’t do the nut topping) and you too will be a Brussels believer.  

 

 

Roasted Brussels Sprouts with Brazil Nut Parm

Ingredients
  • Brussels Sprouts
  • Salt & Pepper
  • Olive Oil
  • Brazil Nuts
  • Garlic
Instructions
  1. Preheat oven to 400
  2. Rinse Brussels, remove any bad leaves.
  3. Cut in half, put on sprayed cookie sheet.
  4. Spray with olive oil, salt & pepper well.  Flip them once after 10 minutes.
  5. Remove Brussels from oven when edges browned and crisp (about 20-25 minutes)
  6. In food processor or blender place handful of Brazil nuts, 1 garlic clove and pinch of salt. Process until fluffy like Parmesan cheese. Sprinkle over Brussels Sprouts.

Feel free to sub whatever veggies you have, broccoli would be a great. I had a box of quick cooking Barley which makes this recipe come together in much less time. However, whole barley or hulled Barley is a much better choice nutrition wise, packed full of fiber and other important nutrients. If you have the time (1 hr) go with the real stuff.
Ingredients
  • 2 Garlic cloves Minced
  • 1 Onion Minced
  • 2 carrots chopped
  • 1 Zucchini chopped
  • 1 Yellow Squash Chopped
  • Mushrooms chopped
  • Green beans (frozen or fresh)
  • Spices (Rosemary, Oregano, Salt & Pepper, Red pepper flakes)
  • 4 cups Water
  • 1½ Cups Quick cooking Barley (Pearled that has been steamed & dried like oats)
Instructions
  1. Saute garlic & onions until brown, add rest of veggies.
  2. Brown slightly, add spices (start with tsp. if not sure amount).
  3. Add water & Barley, bring to a boil, reduce to a simmer, cover.
  4. If using quick barley, check in 8-9 minutes (45 min. for hulled/whole barley),Taste, add more seasoning if needed (i.e. is it bland? Add few more tsp.at a time of herbs., stir, taste again).

Quick Pasta Bake, use whichever of the veggies you have on hand Prep: Veggies cleaned & diced, Pasta Boiled
Ingredients
  • Diced eggplant, mushrooms zucchini, and or yellow squash, about 3-4 cups (1 eggplant+2 squash)
  • Olive oil, S&P
  • Whole Wheat Penne or Fusilli pasta
  • Jar of sauce
  • Mozzarella Cheese (optional)
Instructions
  1. Preheat oven to 425 degrees
  2. Place veggies in olive oil sprayed baking dish (9''), Salt & Pepper
  3. Roast for 20-25 min.or until tender
  4. Prepare pasta al dente (2 min. under cooking time)
  5. Dump drained pasta and sauce into baking dish, stir to coat ( optional: Add mozzarella)
  6. Bake about 15 minutes or until bubbly and browned, yum!

A quick and delicious meal of veggies and fluffy Quinoa cooked completely in the rice cooker!
Ingredients
  • 1 Garlic clove, pressed or minced & ½ Onion diced
  • ⅔ cup bite size broccoli & carrots
  • Spices: Lemon Pepper or Garlic Salt & Pepper etc.
  • 2½ cups water
  • 2 Tbls.-1/4 cup organic Ketchup
  • 1½ cups Quinoa
Instructions
  1. Plug in rice cooker (or turn on stove w/small stockpot)
  2. Put in garlic, onion, let brown. Add other veggies.
  3. Once browned, add Quinoa, spices, and water.
  4. Stir, cover and leave to cook for about 12 minutes.
  5. Check taste and tenderness (add more water if too dry, add additional spices if needed).
  6. Let cook additional 4 minutes (or ours automatically turns to "warm")
  7. Serve in a mug

A quick and healthy breakfast that will fill you up and is ready in 1-2 minutes. I make a few jars at a time and stick in the fridge/lunchbox for the next few days. Done and done.

I keep a ready supply of frozen ripe bananas in a ziplock bag. Feel free to use the one on your counter, just mash well. I save all my glass PB, Brown Rice syrup etc. jars and reuse them for overnight oats. The possibilities are endless, try with a sprinkle of chocolate chips or a swirl of peanut butter.
Ingredients
  • Half a frozen banana
  • ¼ cup rolled oats
  • 2 tbl. - ¼ cup Steel Cut Oats
  • 1-2 tsp. Chia Seeds
  • Sweetener of choice (Agave, Honey or Zsweet)
  • 1 tsp. Vanilla
  • Sprinkle of spices: Cinnamon, Nutmeg, Cloves
  • Almond milk
  • sprinkle of raisins
Instructions
  1. Stick banana in jar, microwave 20-40 seconds or until melted.
  2. Add oats, spices, vanilla, Chia seeds, raisins, sweetener, and enough milk to cover.
  3. Stir, taste, adjust seasonings & sweetener.
  4. Put on lid, stick in fridge overnight.
  5. Add more liquid if needed. Eat as is or microwave for 1½- 2 minutes.

As the weather turns colder this Quick Fix is a staple in our house.  I prep the few ingredients, throw them in our rice cooker and like a mini-crockpot it cooks them perfectly and turns itself to warm when the dish is ready.

Cooked beans and or rice roughly doubles from the dried amount (I.e. ½ cup dried beans = 1 cup cooked). Therefore, one serving of beans or rice is ¼ dried or ½ cup cooked. Use the base of a grain+a bean+2 veggies and see what yummy concoctions you come up with!

  • ½ cup torn bite size pieces of collards or other greens & Handful fresh diced tomato
  • 1 can diced tomatoes
  • Sprinkle of Spices (Salt & Pepper, Red pepper flakes, cumin, oregano etc.)
  • 2½ cups water
  • 2 Tbls.-1/4 cup Hot Sauce
  • 2 Tbls.-1/4 cup organic Ketchup or Tomato Paste
  • 1½ cup Grain (Brown Rice, Barley etc.) + ½ cup dried Beans (or 1 can)
or
  • 2 cups Grain & Bean Mix
Instructions
  1. Plug in rice cooker (or turn on stove w/small stockpot).
  2. Put in garlic, onion, let brown.
  3. Add grains, beans, canned tomatoes,Greens, spices, and water.
  4. Stir, cover and leave to cook for about 20 minutes.
  5. Check taste and tenderness (add more water if too dry, add additional spices if needed).
  6. Stir in Hot Sauce & Ketchup & Fresh Tomatoes.
  7. Let cook additional 10-15 minutes (or ours automatically turns to "warm").
  8. Serve in a mug with a side salad.

To taste like actual dough, get good quality dates like Medjool. I've tried Sun-made and Amport "chopped dates" and they didn't work quite as well, but still tasted good. The high quality get processed very smooth and become like brown sugar whereas the Amport and Sun-maid remain a bit chunky. I buy good quality Medjool dates at Costco in the produce section, usually by the pineapples and melons.
Ingredients
  • 200 g (1⅔ cups) good quality pitted Medjool dates
  • 75 g (1/2-2/3 cups) cashews (raw, organic, unsalted are best)
  • ½ tsp vanilla
  • ½ cup oats
  • sprinkle sea salt
  • handful chocolate chips
  • almond milk (if needed)
Instructions
  1. In the food processor, blend the dates, cashews, and vanilla.
  2. Add the oats, sea salt and chocolate chips and give a final whirl to stir in.
  3. (If too dry add a almond milk by the teaspoon).
  4. Form into balls (or eat with a spoon right out of the bowl like real cookie dough)....
  5. Keep leftovers in the fridge.

 

 

Fronana! Quick Fix Sweet Tooth: 3 minutes to a creamy (healthy) vanilla treat!

We all get the sweet tooth craving and want something quick! Try this amazingly delicious, 2 ingredient fluffy & creamy “ice cream”  quick fix and comment what you think!

Somehow it tastes just like an ice cream and not “banana-y”…AJ even dug in for an after dinner dessert fix!

I buy big bunches of bananas and as soon as they are ripe I peel them and stick in a large freezer bag. We also use them in protein shakes because of their creamy, fluffy consistency and sweetness.
Ingredients
  • 2 Frozen Bananas (frozen for at least 2 hours or if sliced thin-1 hour)
  • 1-2 Tsp. vanilla
  • Almond milk (optional)
  • Zsweet (optional)
  • cacao nibs (optional)
Instructions
  1. Blend bananas & Vanilla in your food processor for a few minutes.
  2. Scrape down the sides and process until they take on a fluffy, ice cream consistency.
Optional:
  1. Add a few tablespoons of milk if desired to make more like soft serve.
  2. Add a few teaspoons of Zsweet if bananas were more on the green side.
  3. Stir in chocolate chips or sprinkle with Cacao nibs and eat!
  4. Try adding peanut butter, cocoa powder or pieces of Newman's O's YUM...
