Chewy, Fudgy Chocolate Brownies

I modified these from Baking Illustrated’s Triple Chocolate Brownies. These are chewy, yummy, gooey, super chocolaty and delicious! They were even better the next day.  I also tried freezing the leftovers and they were awesome when nuked for 10 seconds and topped with a scoop of creamy vanilla ice cream. Mom, I know you’re on the next airplane here. I’ll have some waiting : ).

 

 

 

 

  • 5 oz. chopped bittersweet chocolate
  • 2 oz. chopped unsweetened chocolate
  • 6 tbl. unsalted butter cut into quarters (Earth Balance Buttery Sticks)
  • 2 tbl. yogurt
  • 3 tbl. cocoa powder
  • 3 eggs
  • 1- 1 1/4 cup sugar
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 cup whole wheat pastry flour
Preheat oven to 350 degrees .
Spray an 8 inch baking dish with oil.

Make a double boiler (glass bowl over a pan of simmering water) and whisk the chocolates and butter until melted.  Whisk in the cocoa until smooth. Set aside to cool.

Whisk together the eggs through salt about 15 seconds.

Whisk the cooled chocolate mixture into the eggs…

Stir in the flour with a wooden spoon until just combined.

Pour into the prepared dish and bake about 35-40 minutes or until puffed and a toothpick inserted into center comes out with a little bit of sticky crumbs stuck to it.

Sprinkle kosher salt over top…

Let cool as long as you can ; )

    1. Glad you liked them too Linda! What a great idea to add avocado. Yum. That would be a good vegan sub for the yogurt as well.
