Fresh Tomato & Spinach Frittata

I made this quick breakfast pie for the parents and pastor at a baby dedication ceremony. It was easy, transported nicely and who doesn’t like a slice of pie for breakfast?

 

 

 

 

Preheat oven to 350 degrees.

I sautéed some fresh tomatoes, spinach and mushrooms in a pan with a little garlic salt.

Then I whipped about 6 eggs + 1/3 cup milk with the hand mixer (about 1 1/2 cups egg whites) and added fresh cracked pepper and a dash or nutmeg.

Then I poured into a pie dish, sprinkled feta cheese throughout and baked about 15-20 minutes or until the eggs were set (cease jiggling and looked firm) and top was slightly browned.


Cut into slices and enjoy!
