These are one of the easiest, tastiest, healthiest, most versatile things you can make AND save money.
1 can of refried beans about $1.19, four servings.
1 Crockpot full of refried beans about $6, fifty servings. (You can freeze or can the extra).
We use refried beans in Enchiladas, Quesadillas, Breakfast Burritos with Eggs, with Rice, Fried in a skillet with Parmesan to make little patties, on Big Green Salads with salsa and cheese….
Refried CowgirlBeans
- 1 4lb. bag of Pinto Beans
- Garlic
- Chipotles in Adobo Sauce
- Garlic Powder
- Minced Onion
- Onion Powder
- Oregano
- Salt
- Cumin
- Paprika
- Smoked Paprika
- Chili Powder
- Red Pepper Flakes
- Cayenne
Rinse and pick over the pinto beans (pull out any broken/shriveled pieces/things that don’t look like beans as the bags always say: “may contain small rocks or stones”…I’ve never found any but good to pick over anyway.)
Put in your Crockpot, cover with water about 2 inches.
Use a garlic press to add about 4-5 cloves, and 2 Chipotles in Adobo sauce. (or dice).
Add your spices, I guesstimate about 2 tablespoons of each to start. I measure by the cap-full. : ) Remember you can always add more later!
Cook on low about 8 hours. Use a potato masher or wooden spoons to mix in, and then squish up a bit. Taste and season as needed.
Serve with warm tortillas, cheese and crisp romaine lettuce.
