Fluffy Cornmeal Pancakes

These are the yummiest, most perfect pancakes! They are fluffy and moist on the inside with a golden brown crust on the outside…YUM!!! I modified these from Pioneer Woman’s “Perfect Pancake” and they really are! They are so delicious and flavorful we even forwent syrup!

These are the yummiest, most perfect pancakes! They are fluffy and moist on the inside with a golden brown crust on the outside...YUM!!! I modified these from Pioneer Woman's "Perfect Pancake" and they really are! They are so delicious and flavorful we even forwent syrup!
Ingredients
  • 1 cup whole wheat pastry flour
  • 1 cup whole wheat white flour
  • 1 cup cornmeal
  • teaspoons Salt
  • 3 Tablespoons Baking Powder
  • 1½ Tablespoons Sugar
  • 2 cups buttermilk (milk + 1 tbl vinegar)
  • 2 whole Large Eggs
  • 3 teaspoons Vanilla
Instructions
  1. Mix together dry ingredients in large bowl.
  2. Mix together milk, eggs, and vanilla in a separate bowl.
  3. Add wet ingredients to dry ingredients, stirring very gently until just combined.
  4. Heat skillet to medium-low heat.
  5. Use a ¼ cup scoop to pour on a greased skillet.
  6. Throw in blueberries, chocolate chips, pecans etc. if you want...These puppies will rise and brown very quickly, flip when bubbles start to form and pop.

Mix together dry ingredients in large bowl. Mix together milk, eggs, and vanilla in a separate bowl.

Add wet ingredients to dry ingredients, stirring very gently until just combined.

Heat skillet to medium-low heat.

Use a 1/4 cup scoop to pour on a greased skillet.

We served with sliced fried potatoes and creamy spinach and Munster cheese scrambled eggs…
