Spaghetti & Garlic Bread: Cooking on Location with MT Mommabear

My dad had been out scoping a hunting and camp site in the Bob Marshall wilderness with his cowboy friend so mom decided to make one of her famous heartydishes for his arrival home.

 

 

 

 

Mommabear’s Spaghetti

Feeds 8  (This fed my grandparents, me, mom, dad, Cowboy George and we had leftovers)

  • 2 lbs. elk meat (use whatever ground meat you have)
  • 1 onion diced

Brown in a stockpot over medium heat. Drain any grease/use paper towels to soak up out of pan.

  • 2 cans mushrooms
  • 1 28 oz. can diced tomatoes
  • 2 28 oz. cans tomato sauce
  • 1 6 oz. can tomato paste

Add to meat in pot.

 

  • 3 1/2 tsp. Italian seasoning (or a combo of oregano, basil, rosemary, thyme)
  • 1 1/2 tsp. garlic salt
  • 1/2 tsp. basil
  • 2 bay leaves

Add, stir

“Don’t forget the Parmesan rinds from the freezer Mommabear!”
(Every time you reach the end of your parmesan, stick the rind in a baggie in the freezer for soups/sauces).

  • Parmesan rinds
Add, taking note of how many you put in so you can fish out before it’s time to serve! (we used 5).
Let simmer over low heat for 2-4 hours. Remove bay leaves and Parmesan rinds.
*When you are about an hour from serving, pop your garlic bread in the oven (below).
*When you are 15 minutes from serving, drop your pasta (we used one and one third box),cook according to directions, drain.

Easy Buttery Garlic Bread

Preheat oven to 350 degrees.
Set out butter to get to spreading consistency.
Get some sort of artisan bread, the Missoula Walmart had a crusty wheat bread loaf in the bakery section.
Slice loaf into 1/2 inch-1 inch slices, set on foil, get your butter out and get to work…..
Butter each slice, sprinkle liberally with Garlic Salt.
Close up in foil, stick in oven for at least 45 minutes.
The last 10-15 minutes, peel back foil exposing top of bread, let brown.
Dad unloading the stock, and ready for a hearty supper!
